Quick Vegetable Pulao

Ingredients:
Rice (Basmati) 1/2 Kg
Oil/ghee 1/2 cup
Onion (Finely chopped) 2 (medium size)
Carrot (chopped) 2 (medium size)
Peas 1 cup
Potatoes(chopped) 2 (medium size)
Cashew nuts 1/2 cup
Water 5 cups

Spices/spice mix 50 g



Method:
Wash rice and soak it for 20 minutes,Fry onions,potatoes,carrot in oil/ghee and cook for 3-4 minutes.Add spice mix and cook for 1-2 minutes.Add this mixture to rice.Add salt and water,cook it it for 10 minutes in rice cooker until all the rice become tender.Delicious vegetable pulao is ready.Serve with raita,salad and chutney.
