Fry the rava/semolina gently till golden brown and fragrant. There should be very noticable change in color and aroma when compared with the raw semolina. Set aside.<br />5. Mix the sugar and water in a pan.<br />6. Heat gently to a rolling boil and keep stirring.<br />7. Check the sugar syrup for a 1-string consistency. This means that when you lift the spoon from the syrup and feel the syrup coating the back of the spoon, it should be very sticky. Blow on it a bit before you touch it - it will be hot!. Gently pinch and spread apart your forefinger and thumb. The sugar syrup should trail in a single strand between the two fingers. This is known as "one-string" sugar syrup.<br />8. Slowly stir in the the semolina to avoid forming lumps.<br />9. Stir in the cashews, raisins and cardamom powder.<br />10. Remove from heat and let cool.<br />11. When warm enough to handle, squeeze a handful of the mixture between your fingers and palm to form small balls.<br /><br />Tips: My mixture became a bit powdery and I had to use a few drops of milk to form balls. Saffron. (dissolved in ¾ cup milk)<br /><br />Curd beaten 1 cup.<br /><br />Juice of 2 Limes.<br /><br />4 boiled eggs. Mix the Chicken pieces with the ginger-garlic paste and beaten curd and Keep aside. Fry the chili paste in 4 tablespoons clarified milk or oil. To this add the chicken, ¼ of the fried onion, 1tsp garam masala(mixed spices) and salt to taste. When the clarified milk separates from the mixture, add one and a half cups warm water and pressure cook till tender. Fry the whole spices in 1 tbsp. clarified milk/oil in a wide-mouthed vessel. Add the rice and fry a little, add green chilies and salt to taste and enough water for the rice to cook. When the rice is cooked, spread it on a plate and remove the spices. Make a mixture of the chopped Kothmir, mint, mixed spices and fried onion and keep aside. Smear the inside of another wide-mouthed and thick bottomed vessel with clarified milk. Spread a layer of rice in it and cover it with half the chicken. Sprinkle half of the pudina mixture and juice of a lime. Put a layer of rice followed by a chicken layer and finish with a final layer of rice. Sprinkle the rice with saffron milk and some clarified milk. Cover tightly and cook for twenty minutes over slow fire.
