Potato Fry curry
Ingredients
3-4 mid-sized red potatoes, diced and boiled
1 small onion, finely sliced
1/4 tsp turmeric powder
1/2 tsp red chilli powder
salt, to taste
2 tbsp light cooking oil
Coriander leaves
Method
Heat oil in a non-stick pan. Add onions and fry till brown.
Add red chilli powder and turmeric powder, and then add potatoes, stirring well to coat with spices.Add salt and let potatoes fry for 5-6 minutes, stirring occasionally. Sprinkle with coriander leaves, stir well and let cook for another minute or two.
